Not too difficult. If there is a $20 premium for the encoder versions of the motors then going with an after market encoder wont cost much more either.

If you have a decent small tip soldering iron the mod is very simple and not really possible to damage the encoder PCB if you first check you have the correct caps(by testing continuity to the main motor leads/tabs) but if you aren't comfortable with it then you aren't.

I'd like to a tutorial on it but there is just never enough time in the day.
