When using position control with RC mode, you first need to setup the controller using IonMotion and tune the PID settings and confirm the unit is working correctly. Part of this will be to setup the minimum and maximum positions allowed. Then when RC mode is set and encoder support is enabled for RC mode(see General Settings in IonMotion), the Roboclaw will convert the RC pulse range to match the min and max position settings you made.

If auto calibration is enabled(eg MCU mode is not checked in IonMotion) then the center position will be whatever the RC pulse is when the Roboclaw starts up and the min and max positions will automatically adjust ot use the full range of your RC controller.

If you disable autocalibration(check MCU mode in IonMotion) then the center position is 1500us and the min and max positions are 1250us and 1750us respectively.
