Hey there,
having a lot of trouble trying to put together a more permanent circuit because the headers that come with the board. I want to solder wires onto the board, or have some better connection method. I ended up unsoldering the headers, but that was a nightmare that lead to a fried MCU (I think).
So, is there the option to get an unpopulated board? I'm open to other alternatives too.

Unfortunately no there is not. We can not ship both populated and unpopulated versions.
I usually recommend two alternatives. 1: Use a 2xX pin .1" spaced female header. Here is a link to ones available from AdaFruit. The more populated pins the stronger the hold.

Alternatively you can go with the 2x45 Screwterminal version of the Roboclaw.
A third option is to plug your wires in and then zip tie them with some relief nearby or to one of the Roboclaw mounting holes.
